Australian Christmas Cake




  1. Sift together all dry ingredients.
  2. Divide in half.
  3. Prepare all dried fruit and almonds.
  4. Combine with half the dry ingredients.
  5. Cream butter and sugar.
  6. Beat egg yolks with syrup and add to butter mixture.
  7. Add all the fruit and the pineapple.
  8. Add the remaining flour, pineapple juice and brandy.
  9. Beat the egg whites until just stiff.
  10. Fold egg whites into mixture.
  11. Prepare 8" cake tin.
  12. Add mixture and scoop out the top.
  13. Bake at 250 or 120 or gas 1 for 7 hours at least.
  14. Remove from tin and cool for 24 hours.
